Equipment

  • Large mixing bowl
  • Fine mesh sifter or strainer
  • Whisk
  • Measuring cups and spoons
  • Airtight container or mason jar
  • Food processor (optional, for finer texture)

Ingredients

  • 3/4 Cup unsweetened cocoa powder (or Dutch-processed cocoa for smoother taste)
  • 1 1/2 Cups powdered sugar (also called confectioners sugar)
  • 1 Cup  powdered milk (also called dry milk powder)
  • 1/4 cup cornstarch
  • 1/4 tbsp salt
  • 1 tbsp vanilla powder (optional)

Instructions

  • Gather and measure all dry ingredients. Pour the cocoa powder and powdered sugar into a fine mesh sifter.
  • Sift cocoa powder and powdered sugar into a large bowl. This removes lumps and prevents clumpy hot chocolate. This step matters for smooth, creamy drinks
  • Add the powdered milk, cornstarch, salt, and vanilla powder to the sifted mixture. Use a whisk and mix for about two minutes. Make sure everything blends well with no cocoa powder clumps hiding in corners.
  • Taste test the dry mix (yes, really). Does it taste too bitter? Add more powdered sugar. Too sweet? Add more cocoa. This is your recipe. Make it your way.
  • Pour into an airtight jar. A mason jar works great. Label it with the date. Store in a cool, dry spot. It keeps for six to twelve months.
  • To make hot cocoa: Use 3-4 tablespoons mix per 8 oz boiling water. Stir hard for 30 seconds. Stir again to catch powder on the bottom. For creamier drinks, use hot milk instead of water.

Notes

Make peppermint hot chocolate by adding 1/2 teaspoon peppermint extract. Make Mexican hot chocolate by adding 1 teaspoon cinnamon and tiny pinch of cayenne pepper. Make mocha by adding 1 tablespoon instant espresso powder. Make white chocolate by replacing cocoa with 1 1/2 cups white chocolate powder.
